Sloe gin
Half oil a 1 kg clean preserving glass jar with a screw on lid with pricked clean sloes, adding 125 g (4 ounce) of castor sugar, and fill the jar up to the top with dry gin.
Place the sealing ring on the top, and screw the lid down tightly. Shake the jar daily until the sugar is dissolved and the liquor darkens. After two weeks, ten ml ( quarter of an ounce ) of almond essence can be added.
Leave the sloes in the jar for two months, shaking up fairly often. When the gin is bottled, preferably in a half-size liquor bottle, the liquid must be run through linen or a filter to ensure all particles that would otherwise mark the clarity are kept from the bottle.
