- Pour the boiling water over the raisins (or concentrate), barley, and the red sage leaves.
- Allow to cool, then add the juice of two lemons, the nutrient, and the chosen wine yeast.
- Alternatively, add one level teaspoon of dried wine yeast.
- keep covered in a warm place for seven days, stirring daily
- Put it in a fermentation bucket with an airlock and ferment as you normally would.
