- Pour the boiling water over the berries and let them stand for four days.
- Add the sugar, wine concentrate, citric acid, and wheat and stir until the sugar is dissolved.
- Add the wine yeast and yeast nutrient.
- Leave to ferment for 16 days, closely covered.
- Strain into a fermenting jar (Demi JOHN) and fit an airlock.
- When it clears, siphon into bottles, caulking lightly at first.
