- Crush the elderberries and strain off the juice.
- Leach the pulp by adding 1 gallon of boiling water, stirring for five minutes and then straining off the liquid.
- Press lightly.
- Repeat this treatment with a similar quantity of boiling water.
- Add the wine concentrate and nutrients to this elderberry extract,
- Add another 7 L of water
- When cool, add the yeast starter and ferment for four days
- Add the sugar and stir until completely dissolved.
- Make up the volume to 18 L with water.
- Then continue as usual with fermenting, racking and bottling.
