  • Crush the elderberries and strain off the juice.
  • Leach the pulp by adding 1 gallon of boiling water, stirring for five minutes and then straining off the liquid.
  • Press lightly.
  • Repeat this treatment with a similar quantity of boiling water.
  • Add the wine concentrate and nutrients to this elderberry extract,
  • Add another 7 L of water
  • When cool, add the yeast starter and ferment for four days
  • Add the sugar and stir until completely dissolved.
  • Make up the volume to 18 L with water.
  • Then continue as usual with fermenting, racking and bottling.
