- Boil the hops and ginger in the water for one hour.
- Strain the liquid and pour the liquor over the sugar, orange and lemon juice.
- After allowing to cool, put everything into a fermenting jar, only up to shoulder level with the wine yeast and yeast nutrient.
- Fit an airlock.
- When it has nearly fermented out, add 250 millilitres of grape concentrate, 225 g (Half a pound) of brewing sugar, and refit the airlock.
- When no more bubbles pass, bung down tightly.
- Leave for six months before bottling.
