The Cellar 7 wine kits contain five litres of concentrated grape juice, meaning that you do not add any sugar is to make 30 bottles of wine

Cellar 7 wine kits are created from the most beautiful European grape concentrates. 

They make 30 x 70ml bottles of 21 litres of wine, and each kit includes a fermentation stopper, wine stabiliser and wine finings.

Cellar 7 wine kit requires no sugar as the taste comes directly from the juice.

Allow 1 to 2 weeks to brew before bottling. 

As with all wines, Cellar 7 wine kits will improve with age.

Years of expertise have created some of the most famous wine styles available, 

Cellar 7 Chardonnay: This wine kit is pale gold, rich and silky in texture—light citrus flavours combined with peaches and tropical fruits.

Cellar 7 Pinot Grigio is a fresh, crisp white wine with an elegant light palate and aroma of flowers and almonds that are refreshing and smooth. 

Cellar 7 Pinot Grigio Blush: At the end of ripening, the Pinot Grigio grape turns into a lovely shade of Salmon Pink. This shade adds a beautiful fresh, crisp light coloured rose. Floral hints of Strawberry and Cherry make this rose a real hit.

Cellar 7 Sauvignon Blanc: A clean, crisp, dry, refreshing white wine, best served chilled. Flavours of gooseberry and grass.

Cellar 7 Shiraz: A bold, spicy red wine with deep purple colour. Flavours of blackberry, cherry, and plum, with a hint of black pepper and dark chocolate.

Cellar 7 Cabernet Sauvignon: A full-bodied red with aromas of fresh, ripe blackberries and blackcurrants and a long lingering spicy palate.

Cellar 7 Spanish Rojo: Full Bodied deep red colour with hints of Vanilla and oak.
A powerful but smooth red wine perfectly balanced with the subtle textures of fine-grained tannins.

Cellar 7 Merlot: Is a lively bouquet of plum, blueberry and hints of blackcurrant on the nose. The palate is beautifully rounded, soft and juicy.

Cellar 7 Merlot Blush: This tasty example will convert you if you're generally not a rose drinker. The best of both worlds.

Cellar 7 Malbec: A beautifully soft fruity wine with the unique appearance of violet tinted red. Flavours of Blackberry, Black cherry and Plum with a hint of Cocoa all add to the fantastic smooth velvety lingering finish.

Cellar 7 Fruit Peach & Mango: Pale gold, rich and silky in texture, with a luscious boost of Peach and Mango that explodes onto your tongue. It results in a refreshing medium to sweet white wine.

Cellar 7 Fruit Raspberry & Cassis: This refreshingly fruity Merlot has a lovely smooth taste enhanced by the fruit addition of Raspberry and Cassis. The result is a perfect balance of fruits combined with the plum flavours of the Merlot grape, leaving you wanting more and more.
Flavourings: Raspberry juice concentrate, Cassis juice concentrate, Natural Cassis flavouring, Natural Raspberry flavouring
Sweeteners: Acesulfame K.

Cellar 7 Fruit Summer Berries; This gorgeous rosé wine uses the Pinot Grigio grape, which is left to ripen until it turns into a lovely shade of Salmon pink. A fresh light coloured rose that already has the undertones of Strawberry and Cherry is enhanced further by the luscious flavour of the wild berries.
Flavourings: Raspberry juice concentrate, blueberry juice concentrate. Natural Strawberry flavouring, Natural Blackberry flavouring, Natural Raspberry flavouring with other natural flavourings.
Sweeteners: Acesulfame K

Grape juice concentrates sugar, water, citric acid (E330) and preservative Potassium Sorbate (E202)

Instructions for Cellar 7 Wine Making Kits

Before use, you must sterilise all equipment.  

You will need the following equipment, all available from Brew Mart.

  • 1 x 25 litre Wine Fermenter with lid and grommet: for fermentation 
  •  1 x 25 litre Wine Fermenter with solid top: for transferring/racking
  • Airlock: to allow the release of gas produced during fermentation
  • Long-handled spoon or paddle: to stir/remove gas from your brew.
  • Hydrometer: to check the fermentation process at the beginning and when complete
  • Syphon: to transfer your wine from the Fermenter for racking
  • Steriliser: to sterilise all equipment before use 

Additional Recommended Equipment:

  • Hyrodmeter/Trial Jar - to help check specific gravity during winemaking
  • Degasser - to remove the co2 gases from your wine 

IMPORTANT: Please read all instructions before beginning.

Day 1

Record the date and the Specific Gravity reading of your must.

 Save reading and keep it for future reference.

 1. Empty the grape juice concentrate into the fermenting vessel. 

2. Top up the vessel with lukewarm water (20-25C) to make twenty-one litres.

3. Sprinkle in Pack A (Wine Yeast/Nutrient) and mix well.

4. Fit the Airlock into the grommet in the lid.

5. The Airlock should be half-filled with water. 

6. Place the Fermenter in a warm environment (20-25C).

Choose your place carefully where there is a minimal risk of damage if fermentation is vigorous. 

A vigorous fermentation may cause frothing or leakage from the vessel. The fermentation should start within twenty-four hours.

Evidence of a started fermentation is seeing C02 gas bubbles in the Airlock and a frothy layer on the liquid surface.

Day 5

Record the date and S.G. reading

7. Fermentation should now be complete. The evidence will be no longer see bubbles passing through the Airlock. 

Brew Mart recommends that you use a hydrometer and trial jar to check the Specific Gravity of your wine. 

Checking that the S.G. is 1.000 or below, you can move on to the next stage. If not, taste your wine. If the wine is too sweet, leave it for a couple of days before proceeding.

8. Syphon / Rack the wine into another sterilised fermenter, ensuring that all the sediment is not disturbed and is left behind. 

9. Stir the wine, which is now in the new Fermenter, for 1 minute to get rid of the C02. Repeat this 2-3 times, leaving a few minutes in between. Stirring will help with the clearing of your wine.

10. Add Pack C (Stabiliser) and mix thoroughly.

11. After 3 hours, add Pack E (Finings 1), mix well and leave for 1 hour.

11. After 1 hour, add Pack F (Finings 2) and mix well. Leave the wine to clear. 

It would be best to place the Fermenter on a surface at table height to transfer your wine for Bottling / Storage. 

During the next 48hrs your wine will clear. Before proceeding to the next stage, ensure that your wine is thoroughly transparent.

Day 7

12. Syphon the wine into bottles / suitable storage containers and seal. Take care not to disturb any further residual sediment in the bottom of the Fermenter. The wine is now ready to drink but will improve if left in a cool, dry place for a few weeks.
