Blackcurrant Wine (Ribena )
- One twelve-ounce bottle of Ribena blackcurrant juice can actually produce one gallon of wine.
- Dissolve one and a half kilograms (three pounds) of sugar in warm water.
- Incorporate the blackcurrant juice.
- Bring to a boil, then simmer for 10 minutes to remove any preservatives.
- Cool and pour into a gallon demijohn, filling it to the shoulder.
- Add your selected wine yeast or a level teaspoon of granulated yeast.
- Include a small amount of acid (1/3 teaspoon of citric acid) and a dash of yeast nutrient.
- Position the airlock and set the demijohn in a warm area to initiate fermentation.
- When the vigorous fermentation subsides after about two weeks, top up the demijohn with water to the bottom of the neck and reinsert the airlock.
- Then, proceed with fermentation as usual.
