Blackcurrant Wine (Ribena )

  • One twelve-ounce bottle of Ribena blackcurrant juice can actually produce one gallon of wine.
  • Dissolve one and a half kilograms (three pounds) of sugar in warm water.
  • Incorporate the blackcurrant juice.
  • Bring to a boil, then simmer for 10 minutes to remove any preservatives.
  • Cool and pour into a gallon demijohn, filling it to the shoulder.
  • Add your selected wine yeast or a level teaspoon of granulated yeast.
  • Include a small amount of acid (1/3 teaspoon of citric acid) and a dash of yeast nutrient.
  • Position the airlock and set the demijohn in a warm area to initiate fermentation.
  • When the vigorous fermentation subsides after about two weeks, top up the demijohn with water to the bottom of the neck and reinsert the airlock.
  • Then, proceed with fermentation as usual.
